How many different recipes or ways to use turkey left overs??

I can list a lot, but one I make every year is:

I'll have sandwiches for a day or two and what ever is left I will toss out, maybe I should wrap it up and send it to Ringo.
 
We usually have hot turkey sandwiches smothered in leftover turkey gravey, smashed taters and green beans. If there are still leftovers from that the last of it goes into a large turkey pot pie. :D
 
I always look forward to turkey enchiladas! Just a chicken enchilada made with turkey instead, an extra treat when made with leftover smoked turkey.

The small fragments cleaned from the carcass are perfect for this use and are valued as highly as the sliced breast meat is for sandwiches around here. You have to remember, of course, that "here" is Texas.
 
I just cleaned the carcass awhile ago, left out some meat to make sandwiches for another day or two. The carcass is simmering down for stock, that'll go into the freezer for along with the remainder of the meat.

I found a recipe for tamales recently so sometime later in the year when I have a Boston butt, I'll shred whatever's left of that and make one batch of turkey and one batch of pork tamales. Mississippi delta style.
