I have now had my first sets of "Cokes" in my hand. Why did S&W ever stop putting the on their revolvers? They are the best fit for my hand and have the nicest feel to them. And, I think, they look cool as hell too.

For the same reason restaurants discontinue your favorite menu items....because "We can!". A show of 'blatant power!'.
Seriously, if it's about the 'feel', and not having to have 'the real thing', Altamont does have "Coke profile' stocks (grips...you pick!) available.

Cost cutting, machinery worn out, standardization to regular Target stocks, an arbitrary decision...take your pick.
Probably "standardization" so all N-frame target stocks would have the same pattern of checkering.

Standardization = Cost. Our favorite handgun company has struggled with production costs for a very long time. This is why many of the firearms they produce have two piece barrels, its far less expensive to rifle a long tube and cut various lengths out of it then thread it than it is to form differently shaped items.
