Your Frito Pie recipes please. Here's mine and it definiitely works.

OK, what are your ways of making a simple dish like Frito Pie? I make a few variants.

Ingredients I use-though not all in the same variant.

Wolf Brand Chili--no beans.
Shredded Cheddar Cheese.
Kraft American Cheese.
Whole Kernel Corn (I may try making some with Creamed Corn next just to try it out) I added corn to it just to add a bit more to it and it worked.
I do not use--regular Fritos. I only use the Chili Cheese--and also the Flaming Hot kinds--and they work perfectly to add a bit more flavor.

Now, when heating up the chili, I mix in the corn, and already mix in the shredded cheddar cheese. After its getting hot, I then add sliced of American cheese--mix till totally dissolved. Im sure most here like their cheese not totally dissolved--OK, i like it that way too, but I like it my way as well.

Anyway, after my chili is piping hot, I add a bit more cheese to it, then dump Fritos into the bowl-then pour an amount of piping hot chili over it--and were good to go.

Anyone goy any other ideas for this simple dish? Im open to suggestions--only--NO beans.

Grease a baking dish , spray with canol oil
place a layer of fritos I use the chilli ones as well
pour chilli over top with cheese and chopped up onions and repeat for top layer
Add jalapenos if you want
bake 20 to 25 minutes
I added brazed hotdogs cut in pieces and it was pretty good at one time

Get invited to a social function where Frito Pie is going to be served. Show up hungry! Ask the host to prep a small portion for you as they like it. If you are hungry enough it should be good. :cool:
 
Never heard of it before, so I had to look it up. Seems they're just a prepared food take-off on nachos.

I like to top baked nachos with diced onion, pickeled jalapeños, sliced black olives, salsa, sour cream and guacamole. Any or all...

Never buy guacamole, just make it yourself. It's very easy and so much better. Mash ripe avocados. Add diced onion, diced tomato, diced pickeled jalapenos, some of the jalapeño juice, a good amount of chopped cilantro and fresh lime juice. Gently stir and add salt to taste. Yum!!!

What's with all that extra stuff? The beauty of the recipe is it's simplicity.

Snack bag of Fritos split down the seam.
Wolf chili no beans.
Grated REAL Longhorn cheese, not that convenience-store goop.
Diced onions.

Pour chili on Fritos, top with cheese & onions, and dig in.

That's the original recipe from Texas, home of Fritos and the pie.
 
I go with Home made Chilli.
It goes in the bowl first.
Then shredded Cheddar and chopped onion on the Chili.
Then Corn Chips, usually Santitas, on the top.
Ok!
When I went into the kitchen to get the name of the chips,
I just had to eat some!
I like to break the chips into the Chili as I mosey along.
Sometimes I add jalapeño and sliced avocado.

I have had one, but it's been a while.
There are a multitude of great places to eat in Santa Fe.
When I eat there Frito Pie don't make the cut!
The original Pie is at the Five and Dime on W. San Francisco just S of the Plaza.
Walk in, take a look, watch them make them, take a picture.
Then walk West about a block on San Franscisco to Tia Sophia's and eat there.

I usually make mine with Wolf Chili (no beans), Regular Fritos, and shredded Cheddar cheese (I like Sharp for this recipe.) I have also added beef crumbles (like Taco meat, found in the meat aisle with the wieners and lunch meat) and/or chopped onions (sweet Vidalia) if I have them...but just a "plain" Frito pie is very good, especially on a cool day.
 
House brand (H-E-B) fritos and canned chili. Shredded cheddar cheese on top. Stick into the microwave to melt cheese. Add sliced jalapeño peppers if desired. Regarding canned chili, the H-E-B house brand (no beans) is the best, but you are unlikely to find it outside Texas and parts of northern Mexico.

The Original Frito Pie

Fritos were first created in San Antonio, and some here believe so was the Frito Pie. Sort of like the arguments as to who invented the hamburger.

The original Frito inventor (during the Great Depression) sold off his idea for essentially nothing.

One of my favorite eating places (about a block from where I live) has a food bar with numerous ingredients for making your own version of Frito Pie. And all you want.

Ah, Frito Pie...breakfast of champions! As a Texan, Frito Pie is a real favorite of mine. I have a colleague at work from New Mexico who introduced me to the New Mexican equivalent - Tacos in a Bag. Not as quick to make as Frito Pie, but it's well loved in our house. You brown a pound of ground meat and add a package of taco seasoning with a chopped onion. Open a lunch bag sized package of Doritos and put a big spoon of the taco meat on top of the chips. Add a big handful of shredded cheese and a spoonful of sour cream, and you're good to go. For a "healthier" version, take a large plate and add a layer of shredded lettuce to it, top it with the Doritos, then add the taco meat, cheese and sour cream to make a Dorito/Taco salad. Uh, yeah, the redneck Tacos in a Bag version.
