BUTTER PECAN COOKIES

1 box butter pecan cake mix
2 large eggs
1 teaspoon vanilla extract
½ cup butter, softened
½ cup chopped pecans

Preheat oven to 350.

Cream cake mix, eggs, vanilla and butter together with mixer. Stir in pecans. Drop by spoonful onto greased cookie sheet. Bake 10 minutes. Transfer cookies to cooling rack.

NOTE: Variations such as adding 1 cup of chocolate chips, or 1 cup of Heath brickle chips are delicious as well.

This is great for kids, or old folks like me that would rather eat their chili dogs with a fork. :D

Chili Dog Casserole


6-8 hot dog buns, torn into bite size pieces
8 hot dogs, sliced into bite size pieces
2 cans your favorite brand chili (I use Armour)
2-3 cups shredded cheese (I use a combination of Cheddar and a Mexican blend)

Preheat oven to 350.

Line a greased 13x9 casserole dish with the torn bun pieces. Layer the hot dogs, then chili, then cheese. Bake for 20-25 minutes.

Apparently this recipe has been around for awhile, but I've never heard of it before. When I was trying to print the Betty Crocker traditional peanut butter cookie recipe, I came across this one. Since it only had 3 ingredients, I thought "not even possible". So being the skeptic that I am, I tried it.

Well, to my surprise they turned out pretty good. Not super great if you're expecting a Betty Crocker class cookie, but definitely servable. My husband, my son and one of his friends sure scarfed them down. When short for time, I'd definitely recommend them.

1 cup peanut butter
1 egg
1 cup sugar (white)

Blend all ingredients very well. Shape into smalll balls and roll them in sugar. Flatten with a fork to make the criss-cross pattern. Bake at 350 for 10 minutes.

Friendship is in the West end of the state so come on over and you and my wife can have a cooking contest and I will find some judges.

Cinnamon Pull-Apart Bread (Monkey Bread)

½ cup white sugar
1 teaspoon cinnamon
2 cans Pillsbury Grands Homestyle refrigerated buttermilk biscuits
1 cup packed brown sugar
¾ cup butter, melted

Heat oven to 350. Lightly grease a bundt pan.

In a large plastic food storage bag, mix white sugar and cinnamon. Separate dough into 16 biscuits. Cut each biscuit into quarters. Shake biscuit pieces in bag to coat. Arrange in pan. Mix brown sugar and butter; pour over biscuit pieces.

Bake 28 - 32 minutes or until golden brown. Cool in pan 5-10 minutes. Turn upside onto serving platter; pull apart to serve. Serve warm.

EDIT: I should have noted that I cut the recipe in 1/2 when I took this photo, so if you make the recipe as written, you'll have double what you're seeing here.

Creamed Dried Beef aka SOS

3 jars dried beef
1 stick butter or margarine
1/2 cup all-purpose flour
4 cups milk

Tear (I cut with scissors) dried beef into small pieces and set aside. In saucepan, melt butter over low heat. After completely melted, add flour and mix in with spoon until no lumps show. Add milk and turn heat to high, stirring constantly until it boils. Turn heat back down to medium, stirring constantly, until desired thickness is achieved. Stir in dried beef. Serve over warm toast.
For large crowds, double recipe.


Eaten cold over burnt toast outside standing up in the rain from a mess kit....oh I'm sorry I was having a flashback....

Believe it or not, I was so busy last week, helping move my parents, that I didn't get to cook AT ALL! Not once. Since that chore is finished, for the most part anyway, I should be able to try some new recipes this week. If they are worthy, I will definitely post them. :)
 
OK, this isn't a new recipe, or even a real "recipe" at all, but it's something I often make when I'm in a hurry. Yes, it's swimming in butter while it cooks, but I never claimed to be a healthy cook. :D

Super Simple Chicken Chunks

4-5 boneless, skinless chicken breasts
Mrs. Dash Extra Spicey (or whatever flavor your prefer)
Lawry's Seasoning Salt
Butter

Using a pair of kitchen scissors, cut the chicken into bite size chunks. Place several large pats of butter in the bottom of a 12" frying pan. Add the chicken chunks and liberally sprinkle the Mrs. Dash and the Seasoning Salt onto chicken. Cook over medium-ish heat for about 30 minutes, stirring occasionally.

I typically serve them with flavored rice or stuffing, and corn-on-the-cob.
 
I like the way you got the yin yang thing working with the skinless breasts and butter. MMMMMMMMMMMMMM
