Grilled limburger cheese sandwich and a cool German beer that's good eats. A New York Strip, rare, with a nice chuck of blu cheese melted on top, good eats.

Aged cheese molds. That's a fact of life. It improves the flavor.
But I never eat the mold, that gets cut off.
Good beef is allowed to mold also. Something about the mold begins to break down the fibrous tissue and tenderizes it. I paid a lot of money for a molded steak once, left out to rot for 30 days....
They cut the mold off and cooked it. I could still taste the mold kind of, but I enjoyed the heck out of it.

There are different types of molds, just like there are different types of mushrooms. I would treat molds on cheese with a little more respect, just like mushrooms. I know the green stuff on cedar cheese will lay you flat on the floor for hours, and you will be wishing you were dead.

Back in the years before the producer's facility burned down, there was a cheese called Liederkranz. It was kinda like Limburger, but softer, smellier and tastier. My dad and I used to buy it and deliberately wait a few weeks after its marked expiration date.
Then we'd open it up, savor the stink, cut into the gooey part, hold our noses and spread it on saltine crackers. We'd both go to bed happy, albeit with very bad breath. We loved living on the edge...
