I agree with Erich. The Owl used to be the place, but the Buckhorn across the street in San Antonio is now much better.

As for Hatch, I think that Sparky's is over rated, and never stop in there anymore. However, the Pepper Pot around the corner on Highway 6 is a must whenever we go through there near lunch time.
 
Another San Antonio Business worth mentioning is the Snake Farm Store.
It's on the S side of the Highway across from the Owl.
And just East of the Buckhorn.
It's a good possibility that the Buckhorn uses Snake Farm Chile considering that the Sichler Family owns both of them.

Pepper Pot - so much more my style than Sparky's. :) I can't believe I'm telling you this (it's already tight to find a seat amongst the locals) , but sometime you might try the Valley Cafe next to that. (They won the local best enchilada competition, and they're playing against the varsity down there.) We've quit going to the Pepper Pot since trying Valley.

Turquoise Trail is on my list of best backroad drives. But it's been almost 30 years since I've done it. I'm sure it's changed. I don't remember Madrid as having anywhere near 80 homes.

And, since the Mine Shaft in Madrid (only the Anglos say "MAD-rid," BTW; ask my 92-year-old suegro) was mentioned, here is the "NM Wagyu Green Chile Cheeseburger" they served me in April. I asked for it to be medium . . . it was - a little under.


 
I stopped going to Lotaburger. The burgers got smaller, the quality went down, but the price went up, way up - almost $16 for a meal -burger, seasoned fries and a small drink. Yeah, no.
