I'm dying for some good Cajun cooking and we have none here in these parts!
May have to wait a bit for vacation time to get back down your way! 
I have one restaurant nearby that can make a pretty good Jambalaya but it's not like what I had in New Orleans!

My wife and daughter are at this moment on the ocean aboard a cruise liner headed towards Jamaica. they have been planning this for months. I hope she gets some rest and haves some fun. Frank

Rumor has it there should be a crawfish pie in the works soon from the leftovers. I'll try to slow down my eating long enough for a pic.
