whats your egg salad recipes?
Just wondering what you use to make it besides eggs? Mine is sweet and simple. 18 large grade A eggs hardboiled more than a few minutes. Dice them in a bowl, no set piece size, several spoonfuls of Miracle Whip...light, or your choice of binder! Salt and pepper to taste. When I want to get fancy? I finely dice a few celery stalks.
Am I missing anything from a world class version?

I do small batches cause I'm the only one who eats it.
6 boiled eggs, large dices
1 tsp Miracle Whip
1 tsp Real Mayo
1 tsp chopped celery
1/2 tsp chopped onion
1/2 tsp chopped bell pepper
Salt and pepper to taste and sprinkled with paprika. Pretty much a deviled egg on bread  .

Chopped boiled eggs, chopped onion, chopped celery, salt/pepper,
a couple shakes of yor favorite hot sauce, (I like Louisiana Crystal),
Mayo or Miracle Whip, I have used both, Mix, chill, enjoy.

Leave out the salt,finely dice olives instead. Celery is always good. I can't do Miracle Whip but
, good mayo is a must. Nick

Eggs, mayo, salt, pepper, and dill.
A coating of Sriracha on my sammy.
I like Fritos scoops filled with egg salad.

I love it like stated above, but with a touch of sweet relish.
But my wife will make me sleep in the guest bedroom for two days afterwards!

I like all the above but us South Texas boys will add a chopped up jalapeno. Not a lot, just enough to make your head sweat.

This thread got me thinking. I’ve always made egg salad very simply - chopped up hard boiled eggs and Hellman’s mayo. But I love deviled eggs, they’re like crack to me, can’t stop eating them, so why not add the ingredients to egg salad that make deviled eggs so good - some mustard and a bit of Spanish paprika along with the mayo? I’m gonna have to try it.

Secret egg salad
I know this is thread drifty but bear with me...
If you want to find the secret egg salad recipe, watch Woody Allen's "What's Up, Tiger Lily?".
He took a Japanese spy film and dubbed in his own English dialogue. The object of the search, the secret egg salad recipe.
It's pretty funny but it's worth watching because of the cute Japanese girl doing a strip tease at the end. He admits that it doesn't have anything to do with the movie, but he promised her a part in it.
PS: As usual, you guys are making me really hungry.

Sounds good. I never thought of a bell pepper, but will do so next batch. Deviled eggs....yum.

Deviled Egg Salad
I too like to add a bit of mustard to taste to my egg salad. Spicy brown mustard or equivalent only. Avoid any mustard the color of baby poop.
I use mayo, paprika and finely diced onions. I crush the hardboiled eggs with a fork.

I have no choice on that. Just last month they demolished the one and only company's building that sold farm fresh eggs here. Not its a stinking parking lot.  I don't know if said company still operates elsewhere?

If you mean the regular yellow mustard? I can't stand that stuff. However, do love honey mustard and may try that next time too.

I don't use olives or celery in it. It's just as I make tuna salad, but instead of a can of tuna, just another couple of boiled eggs. I put chopped sweet pickles in mine or sweet relish, maybe a little chopped sweet onion. Plenty of black pepper.
