What's for breakfast? Soufflé omelette de la Mère Poulard perhaps.

This is my first attempt at Soufflé omelette de la Mère Poulard (a soufflé omelette in the style of mother Poulard).

Other than needing to get the pan hotter, so that it is fluffier and has a golden brown color, it came out really good and tasty.

Any of you have anything similar?

Looks mighty tasty! How do you get the fluffiness? Add milk to the eggs and beat away with vigor? Then just cook normally?

Not exactly the Mère Poulard method, but I whisked two large eggs in a glass bowl using an electric hand mixer until I had the eggs at a soft peak stiffness.

My pan wasn't hot enough, so the mixture collapsed some before the bottom browned.

I may have to also whip the whites first and then fold in the yolks to get them even fluffier. I shall see.
 
Thanks for the memories of easily best egg dish we've ever enjoyed. :)

Sorry but can't help with any cooking suggestions. During each visit, we watched a bit of the cooking done over the fireplace in the entrance foyer, but didn't commit any of the preparation to memory We just savored the sublime result.

Highly recommend it. Just inside the defense wall gate of Le Mont-Saint-Michel, in Normandy France. A bit pricey for scrambled eggs, but a true culinary experience in a historical setting.

I would second the beating of the whites to soft peaks and folding in the yolks... and funny... I just watched a Rick Steves episode on Normandy and Le Mont-Saint-Michel last night and he recommended the eggs.... and they said a copper bowl also helps with egg whites
 
Your omelette looks like you have the basics mastered.

Unfortunately, I hate eggs, so I won’t try it for myself. But I’ll give it a try for my granddaughter! She likes eggs.
