The green beans are starting to come out of the gardens around here and it is time to feast on green bean goodness.

Tonight:

3 tblspn butter melted in a large cast iron frying pan
6 pieces thick sliced peppered bacon chopped up

Melt butter and fry bacon in pan while at the same time boil the green beans in water to desired doneness on another burner.

When the bacon is crisped, pour off the water and dump the beans into the skillet. Use tongs to grasp clumps of beans and sop them around in the bacon grease and butter sauce until every square millimeter of bean surface is coated with the magic sauce. Add more pepper and mix it all up good.

Serve them up with a side of horse radish sauce, a couple of Mikes hard lemonade's and enjoy. :D

cook them slow

take large ham hock place in the bottom of crock pot add 5 or6 cans of greenbeans drain water off of 2 or 3 of the cans put in onions chopped up
some sugar maybe a half-a-hand full some Country Bob's season salt
cook 6 to 8 hours.
 
Similar to yours;

Fry up 6 or 8 pieces of bacon until crisp, set aside. turn down the heat and add fresh or canned green beans. Add half (or all) of a course chopped onion and "fry" until onion is translucent. Cover with Parmesan cheese and bake in a 350 degree oven about 20 minutes. Crumble bacon and spread over dish. Enjoy.
 
I've always been partial to pickled beans.

Just heated up and add a bit of olive oil to them.
Although I do like side meat better, I need the olive oil.
 
Another good way to eat greenbeans is to put a couple in a tall glass, add Ice, V-8 juice, salt ,pepper, tabasco, hint of horseradish, lee & perrins and whatever else floats your boat-float an ounce or so of vodka-stir and enjoy the fresh crisp goodness of your garden. Repeat as necessary
 
Funny regarding this post as was just thinking about some fresh green beans. Farmers' Market is Thursdays in my town; will likely grab some.

As the risk of commiting a "sin," I must confess that I realllllllllly like KFC green beans. And their extra crispy chicken; white meat, please. Yummy!

Blanche, boil or steam a couple handfulls, put in pot with 2 or 3 peeled, chopped tomatoes from the garden, simmer a few minutes, enjoy!

OR...

Cover foil lined baking sheet with single layer of beans, drizzle with good olive oil, and put under broiler for 5 minutes, mix around and broil another 5 minutes, sprinkle with salt & pepper, enjoy!
 
I like them steamed and served with a little butter and salt.
I'm with Chad on this one. I'm a Southerner but I likes my green beans French style. Just boil/steam them until just tender and eat 'em with some butter, salt, and pepper.
 
Green bean soup

14.5 oz. green beans or fresh
1lb polish sausage, cut up
1/2 onion chopped
4 medium potato's cut up
1 tp chicken bullion granules
water as need (it's soup)
salt and pepper to taste

Cook until potato's are done.

Serve with thick slice of beer bread.:)

this is a good one:

old eye-talian recipe from nonni.....(god rest her soul)

heat deep pan with oil and drop in 3 or 4 or 5 raw potato
cut in wedges...skin can be on....gauge according to people
eating or if you want leftovers...(this holds well)

fry for a while till they get a little crusty on the outside

can add some onion slices, but this is optional
i never use garlic in this but you could, if you want

add some chopped fresh tomatoes....(can cheat with
either crushed tomatoes from the can or even some
tomato paste too)

add a smidge of water.....not much....maybe half
a cup....you can add more if the thing dries out...

cook for 20-30 minutes and then add your cleaned
green beans....cut in 1 or 1 1/2 inch pieces....cook
until beans are tender...maybe another 20 minutes
or so....can hold well on stove top too....or even removed
from the stove if you have lots going on

potatoes will tend to smash some as you stir...not
to worry....this is the way they should be

so...basically three ingredient "stew"....maybe add
some salt/pepper if you want, or even some flat
leaf italian parsley.....but not necessary

this is a good dish any time of the year, but the only
thing is the beans have to be fresh....frozen wont
work as well....

Fry up a pound of diced bacon in a large cast iron skillet, remove the bacon when done and set aside.

Add a pound of fine diced onions, 8 oz diced celery, and 1 large TBS of minced garlic to the hot bacon grease and sauté until translucent.

Then add your fresh green beans and lightly cook.

Salt and pepper to taste.

Finish with a shot of Pernod or Uzo then add the bacon bits you set aside earlier stir well and serve.
 
Coat the beans with a mix of Thai red curry paste, soy sauce and garlic. Put them on a medium hot grill until they start to blacken, but are still crunchy.
They usually get eaten by the cook and his helpers before they make it into the house.
