I am the type that has to know how everything operates, assembles, disassembles to be confident with the item.

are there any videos or instructions for completely disassembling the 9mm EZ?

Are you looking to do a field strip or a complete detail strip?

Unless you're using it in extreme environments, it should never need more than a detail strip and that is explained in the manual.

If you're not the type who can figure out a detail strip, without videos to guide you, it's probably something you shouldn't do on your own anyway. That's not a criticism, it's practicality.

I've helped a lot of folks on this and other gun forums reassemble their guns after they took them apart. There are often very small parts that are similar, but different in some small, but significant way. Some parts require specialized, or at least uncommon, tools to remove or reinstall. Then there's the random spring that will launch into the black hole of infinity, never to be seen again.

Again, not a criticism, just being practical. It's not something that needs to be done and I would save you the frustration that can come from this work. Neither am I trying to talk you out of doing it. It's your gun and you can do what you like. If you can detail strip a 1911, you can do this one too.

Very adept mechanically

I have Glocks which are no problem to tear down to the ground. This is my first S&W and the field stripping is no problem. My only issue is that this weapon is hammer fired and I am the type that has to disassemble something completely, once, to feel that I really know the weapon. I realize that there will probably never be a real need to remove the sear housing and its assembly, but I would really like to know how to properly remove it if necessary.

BTW: Great pistol!

I also just purchased a Smith EZ 9mm for my wife. I own a couple of 2.0's (45 and 9). I have replaced the trigger kits on both. When field stripping my wife's EZ, I made the mistake of depressing the rear safety. I ended up having to pull the two pins and opening it up. Unfortunately, several pieces and springs came out loose in my hand. I am looking for a parts diagram or guide on how to reassemble. There are not that many pieces, but I know they have to be put back in correctly.

APEX Upgrades

OK, so while you are at it why not replace both the trigger and the barrel with upgraded APEX parts... Not a question, but a suggestion. I have done this on my two M2.0 pistols and all I can say is WOW!:D

Well worth the effort.

Apex doesn't make any replacement parts for the gun in question, the Shield EZ.

YouTube is your friend. Just gotta sift through the misinformation, lousy angles and detritus, so you might have to watch a dozen videos . . .
