I don't own a dog so for me it's YouTube.

If you read my chicken thread you've probably guessed I'm single and lazy. That's doesn't mean I can't fix something to eat. I'm just not into a lot of prep work and side dishes.

Well I like Egg McMuffins. Who doesn't? I'm a late riser so McDonald's is out of the question. YouTube solved the problem with a simple way to make them at home.

To start with you'll need a "muffin" pan. Nonstick is preferable but not necessary if you have PAM spray or butter. Cupcake size pans are too small.

Get some English muffins (any brand) and extra large eggs. Bacon,sausage patties and cheese slices are toppings you can prep ahead of time. You could add peppers or onions to the egg but it might affect how the egg cooks.

Break one egg into each slot on the muffin pan. I just season the eggs with salt and pepper. Don't forget to check for broken bits of shell. Place the eggs in a preheated 350 degree oven for 15 minutes. The yolk will be firm so use less time if you like a runny yolk. Toast the english muffins while the eggs cook.

Make as many eggs as you want and put leftovers in a tupperware in the fridge. They last at least 7-10 days. When you're hungry just toast a muffin...add the egg and fixings and microwave on high for about 50 seconds.

Why not buy several (say one weeks worth) and freeze them?

English Muffins of any brand have become ridiculous in price. By the 6 pack they are about 75 cents each, plus the cost of egg, meat and cheese, it is actually less expensive to go to McDonald's!

I end up eating a breakfast of 2 Sausage Muffins (no egg) twice a week. They cost $1 each. I make a double decker out of them (one muffin with two meat and cheeses), so I have an English muffin left over. I toss them in the freezer (wrapped up!) and use them to make Swiss cheese and bacon breakfast sandwiches on the weekends. When I know the grandkids will be staying for the weekend I'll save up a few, and give "exotic" breakfast sandwiches of any meat I want: Canadian Bacon, Salami, Corned Beef and Smoked Brisket to name some of the better ones (pick wisely, you get to eat the leftovers! Cheap Baloney is not very good for this. Trail Baloney and Summer Sausage are!)

I'm not one for having pets or eating at McDonald's, but McD's make a good resource while traveling. In Europe, besides often having better menu options than in the USA, their free Wi-Fi, coffee to-go, and bathrooms are very convenient on a road trip.

When I got laid off back in 2009, I wanted to come up with some sort of breakfast sandwich to make at home rather than spend the money at McDonald's. I'm a microwave junkie, and luckily I had the works for poaching an egg in the microwave. Using either an English muffin or a Sandwich Thin, I would lay out some sliced turkey on the bread, spice it up a little, then lay a slice of some kind of cheese on the turkey and put the whole thing in the microwave just long enough to melt the cheese. Poach the egg in the microwave and then lay the egg out on the melted cheese and sprinkle the egg with Tony Chachere Original Creole Seasoning.

Before you fully assemble the sandwich and chow down, take a sharp knife and make a cross cut on the poached egg to release any trapped gas. Trust me on this.

I have never seen a turkey, cheese and poached egg breakfast sandwich anywhere. It turned out well for me when I was out of work and I still make them fairly often. Have to keep the local dairy cows and chickens busy, as well as the Thomas's English Muffin plant down the road in Frederick, MD.

Ivan, if I'm ever cruising in central Ohio I will definitelly have to stop in for breakfast.

I don’t know if you have ever tried Sonic’s breakfasts, they are decent and served anytime the place is open. I see they are sprinkled around Denver.

I've seen that appliance advertised on TV a while back. Most reviews that I read were highly negative. The egg oozed out the side before it set and the machine was a pain to clean.

Never ate at Sonic's but anytime someone else is making breakfast for me it always taste better. Heck,I'll put truckstop food at the top for price and quantity.
 
I can't eat on an empty stomach. Coffee & Ibuprofen, then maybe some lunch later; or a few beers. (No, the beers come later on; I may have to go somewhere.) Then more back pills.
Yeah, BWZ's breakfast would work!

I can get eggs 19¢/ea and muffins 36¢/ea. You can season your muffins any way you want. You can add anything you want. I always have some bacon or sausage in the freezer. McDonald's doesn't say "Have it your way."

The lady in the video had a 12cup muffin pan and froze the extras. She even made them with scrambled eggs and added things like onions,cilantro and peppers.

I don't knock McDonald's but you still have to factor in gas and time spent whether it's inside or the drivethru.
 
One pound of hot spicy Jimmy Dean sausage makes eight 2-oz. patties. One tube of ready-made biscuit dough makes 8 fluffy biscuits. Add half-a-pound of nice sliced cheddar cheese and you have 8 breakfast sandwiches for about $5. I make them up in advance, put them in freezer bags, takes about a minute in the microwave to have one ready to hit the road with me, or for a late night snack.

My doc says I can do without eggs on a regular basis. Once in a while I'll do some hashbrowns, smothered with green chile, and a fried egg on top. Special occasions only, like days ending in the letter "Y". If I'm in a hurry I'll roll it all up in a tortilla and call it a breakfast burrito.
 
OP I like your style. FYI no muffin pan needed, an egg cooked over easy will keep just as well in the fridge. Maybe just won’t look as pretty on the sandwich. Rock on.
