Traditional Christmas lunch. Tamales, refried beans with and onion & cheese on top, Habanero salsa with chips, and a couple of ZiegenBock ambers. Man, it doesn't get much better.

We enjoyed watching the preparation and eating a big batch of of tamales with all the trimmings last night at our neighbors. It's become a bit of a Christmas eve tradition. When the Lopez family cooks you know it is the real deal. (o; For us today I have six and half lbs of Prime Rib marinating in my special "Muddy Rub". I'll sear it on the grill and finish it in the oven. Merry Christmas everyone!

Last week one of our friends in Las Vegas had their traditional Waffle Breakfast. Over 30 toppings available !!! They have been doing this for 32 years now and had over 200 people drop by that morning. We drove around 200 miles and stayed at their place overnight. Really a lot of fun.

I grew up in South Texas and it has always been a tradition - served with chili con carne.

I managed to buy them when I live in Louisiana. But, when I lived in Virginia, we got together with a bunch of other displaced Texans and made our own. I was surprised to find the corn husks - the Latin markets were run by Central Americans who make tamales with banana leaves.

Didn't eat them today, but some with elk, some with venison have been laid up in the freezer.

Yes, it's a Christmas tradition in our house. Red and green pork tamales, covered in red chili sauce with more pork in it. Throw on some cheese and onions with refried beans on the side. It made me hungry just typing this. I think I'll go heat up a couple for breakfast.
We also give them out as Christmas gifts to our friends.
