Anyone use oat flour???

Was making pancakes tonight and came up a little short on the mix. Thought to myself-why not pulse some oat meal, add it to the mix and see what happens. Asked my wife to pulse some rolled oats (I wanted the consistencty of instant oatmeal) but she worked it until it was flour.
And you know what? Cut the mix about half and half, added some cinnamon and it came out pretty doggone tasty. Plus I know it's got to be more healthy than that white flour. Anyway-either I came onto something neat or I "discovered" something that everyone has been doing for years. Passin' it on for what it's worth.

My daughter was recently diagnosed as having Celiac disease which is also known as gluten intolerance. This means that she can not eat anything that contains wheat. That includes flour. If she accidentally ingests anything that contains wheat, she has severe gastrointestinal problems. She suffered with it for years and it has been shown to cause miscarriages which she had several before giving birth to my granddaughter 12 years ago.

Because if this we have tried other flours including rice and soy.

The last time I made gumbo, I made a roux using soy flour. I must say that it made as good a roux as wheat flour.

Joe, bring some of that when you come up for the show. I'll make some popcorn rice to go with it. We'll eat your gumbo Friday night and I'll slow cook the venison while we're at the show on Saturday. I'll be needing some lotto tickets also.
