Here's a good herb/spice mix to add to olive oil for dipping bread.
Amounts are simply 1:1, whether you use a teaspoon, tablespoon, or larger quantity. All dried herbs and spices.
It will last a long time.

Red pepper flakes
Oregano
Rosemary
Basil
Parsley
Granulated garlic
Minced garlic
Kosher or sea salt

Put in an airtight container, shake up.

I also sprinkle this on cooked pasta with olive oil and butter for a lighter meal.

Make mine warm with a few less ingredients.

Olive Oyl:D red pepper flakes, oregeno.
Nice fresh Italian bread, just dunk away.:cool:
 
Whatever herbs you are using, put out a little balsamic vinegar alongside the oil. Makes a nice combo.
 
Good balsamic vinegar is a must have.

I'll only use balsamic that has been aged at least 10 years.

The longer it ages, the more mellow it gets.
You can almost sip it like a fine Oloroso.

I'd love to keep some 50+ year old stuff around, but it's gotten pretty pricey.
