Butt's a smoking

I figured I'd smoke these for some pulled pork sandwiches for the 4th...I'll hold off until the morning of 4th to smoke the ribs :D:D

Using a little Apple and Cherry wood and smoking around 225.

Use Sweet Baby Rays....yum...yum

I'm sure the kids and grandkids will enjoy this coming weekend.

Now how is it I can smell this from my computer? YUMMY! Got to have an early lunch now thanks to your pic ;).

I live alone and don't have a smoker or a grill big enough to serve as one, but the Boston butt is my favorite cut of the hog. I rub mine with a mixture of chili powder, garlic powder, onion powder, Spanish smoked paprika, salt, pepper, dried thyme, Worcestershire sauce, a little red wine, and olive oil. I triple-seal it in heavy foil and put it in a 225º oven for five or six hours. Then if I want to I can put finishing touches on it over charcoal; but usually I just pull it and mix it with a bottled spicy hickory-smoke sauce dressed up with wine and spices, including some heat.

Damn, now I need to go buy one of those wonderful chunks of pork!

Nice now you have to make your coleslaw for the sandwich's.

Extra slaw will be made as well since we will probably have hotdogs and hamburgers as well this weekend. When I had the pleasure of living in WV for 12 years I acquired the taste of having a "slaw dog". Down in this part of the country they prefer "chilli dogs"...I'll stick with my slaw dogs.

Now I need to go find me a "BBQ Gun" so I'll fit in totally :D:D

Am I the onliest one left who cooks directly over coals?
This picture was from a few years back.
The grill is made from a 150 gallon diesel tank used to
fuel motor graders in the 1960s.

I have a case of butts (67 lbs) in the fridge ready to
go on the coals Wednesday. Low and slow. Probably 16 hours or so
We will cool the butts down in the fridge, then pull the meat early Friday.
