Cornbread bakers unite!!!! I need your help

The bacon wouldnt last long enough in my place to be able to use it in cornbread.:D

I hear ya!! Bacon is on the grocery list every time we go. It doesn't last long around here. My wife has been cooking bacon on racks sitting over large shallow cookie pans in the oven for a long while now. She pulls them out just before the bacon is completely done, cools it off, then puts a portion in zip lock freezer bags and stores them in the freezer. We take bacon out of the bags and finish it off in the microwave, mostly to get it good and hot. Doesn't take long to have bacon ready for the table (or whatever!).

Trouble is, I have to leave the house while she's cooking the stuff. The smell tolls me into the house and I just stand at the stove and eat that stuff by itself while she tries to get me away from it. Whatever she gets cooked and ready to eat doesn't seem to last long enough for the next trip to the store to get more! Guess it's gonna kill me one of these days, but I'll die with a smile on my face (along with some bacon grease on my lips!):D

I hear ya. I had stocked up on a bunch of Wrights Bacon before our unending heat-wave (summer) started. I still have 5-6 packages left even after the aggie pest control/thief stole about $50 orth out of my freezer on July 28th.

There isn't any law against buying 2-10 packs at one time..... :D
 
We usually buy two or three of the large double packs of Wright brand from Sam's when we buy bacon. Seems like we buy those about every time we go to Sams!!!! Breakfast just ain't right without bacon on the plate. And there are so many other really good uses for it all through the day and into the night, so our supply is always diminishing at a rapid rate!

Come Nov, im buying more. I want to put it in a batch or 2 of cornbread.
 
There are so many good ways to have cornbread. Plain, Mexican, the kind with creamed corn inside. Triangles, squares, muffins, or the awesome cornbread stick. But any which way you make it or cut it, sugar has no place anywhere near cornbread!

Ive even had some with to ingredians I dont like seperately. Broccoli and Cottage Cheese. The stuff I had that Noemi baked was delicious.
