Crockpot/ Crackpot!

Never used one, but I know that for at least some recipes, you can use a plastic-bag type liner, and just throw it away. My wife informs me that these are made and sold specifically for such use. NO washing.

I have two! One fairly large that I seldom use, and one smaller "bachelor" size that sees more action. A boneless chicken breast or two, can of cream of mushroom soup, about half a soup can of H2O, splash of worcestershire sauce, tsp minced garlic, 4 hrs later, EZ homecooked entree'. Ribs of any sort, inundated with BBQ sauce of choice, fire and forget... These little appliances don't heat up the place to anywhere near the same, uh, degree as an oven. Who's got a good beef stew slow-cooker recipe? Please post it!

You're definitely on to something ... we got ours as a wedding present, and we've been married over 25 years now. Back then, the "liners" didn't come out.

Originally posted by photocosmo: DO NOT buy one SMALLER than 4QT. as that is a tiny, tiny volume of stuff that you'll always want more of. BUT, no left-overs!
I think ours is 6 or 7 quarts and it rarely is ever used at anything less than 1/2 or 3/4s full. we do have an old 4 quart but it is the type that is one piece and is a pain but it was what gave me the idea of doing the B-B-Q sauce in one so it has served us well over the Years.

The only comment I have is that we brown the meat before starting the crock pot, so even with the crock pot, we still have to use the stove, and a pan.

Oh and we use ours in the winter only, it seems about 6 months of the year!

"My wife makes a 7 Layer Chicken Enchilada"
EvelMe care to inquire and pass on that recipe?

Nobody has mentioned beans as in pinto or otherwise known as brown beans. That and some sausage cornbread is all anyone needs.

Suprisingly enough, (

)I mis-spoke!
Mrs EvelMe's recipe is for Slow-Cooked Taco Casserole (awesomely good

) but I called it Chicken Enchilada, which is a soup (also really good) we both heartily enjoy at Souper Salad Restaurant.

Taco Casserole recipe to follow - get your mops ready, you'll be drooling!

GST, we make ham & beans with white or brown beans.

You're right Eagle! I'll looking through that cookbook for a while.

But, I think I'll be eating Taco Casserole this weekend!

Who's got a good beef stew slow-cooker recipe?

CROCKPOT BEEF STEW

2 pounds stew meat
4 slices bacon, cut into 1" pieces
1 (18 oz.) jar brown gravy
1 (14.5 oz.) can diced, peeled tomatoes
1 tsp. dried thyme leaves
1 (8 oz.) pkg. fresh, whole mushrooms
½ tsp. salt
¼ tsp. pepper
1 pound baby carrots
2-3 cans new potatoes, or 4 whole potatoes cut into small chunks
1 medium onion, coarsely chopped

In medium skillet, over medium-high heat, cook beef and bacon until beef is browned. Drain. In 4 or 5-quart crockpot, combine gravy, tomatoes (with juice), thyme, salt and pepper. Add beef, bacon, carrots, potatoes, onions and mushrooms. Cover. Cook on low setting for 8-10 hours, or until meat and veggies are tender. For a thicker stew, remove lid and turn to high setting for last hour of cooking. Stir occasionally.

Sounds good, Dixie. I make something similar except I add just a teaspoon of prepared horseradish instead of the bacon. I'm going to have to try it with bacon.

Use mine about once a week. Last week it was corned beef and cabbage. This week it was pulled pork.

Bookmarked the recipe site and clicked on the Taco Casserole. Looking good.

BTW - Found my crockpot at a garage sale for $5. Even new they are a bargain.

Crockpots are a godsend in my house. Especially at family cookouts, when our big Italian fam gets together cut up some spicy italian sausage (Home made of course) and throw that in with some marinara sauce and let it cook for awhile, nothings better. Plus my nacho dip for packers/ Brewers games, cant be beat. But my grill is my first love

Hey guys, this is the ONLY way to go. You put the bag in, cook your goodies, eat goodies, throw away the bag! No MESS! NO CLEANING! The only way to go. Be a hero--tell your wife about it!

I mis-spoke on the recipe on the forum. It's actually Slow Cooked Taco Casserole rather than 7 Layer Chicken.
It is 7 layer (or more) though. I don't like olives or sour cream , though, so we don't use them. Everything else is AWESOME!! We use a big crock-put, this recipe just about fills it up.
We don't use all the same brand names, but got the recipe from Pillsbury Bake Off cookbook and I think that these brand names are all owned by the same company that own Pillsbury.
Enjoy! You will LOVE IT!
