Culinary retrogression.

Past several weeks have been miserably hot, upper 90's to low 100's daily, dry as a popcorn fart, half the state burning up in forest fires and the air choked with smoke, dust, and pollen. Tiresome and tedious.

What to make for dinner on a dismal day like today? Here is what I came up with:

Pasta salad with fresh bell pepper, tomatoes, mushrooms, cucumber, three shredded cheeses, and a vinaigrette dressing, chilled before serving.

Lightly toasted French bread with a bit of spicy brown mustard and a large slice of bologna, fried to a crisp before placing on the bread.

I clearly recall my first attempts in the kitchen, probably 11 or 12 years old, and fried bologna sandwiches were just the thing back then.

As it turns out, these are not bad today!

Where you resort to fried baloney, I would make sandwiches out of Braunschweiger aka liverwurst, on sourdough with mayo, yellow poster paint mustard and a slice of Kraft American Singles.sliced white onion or pickles optional, to go with your salad.

Omit the cheese and you describe Ruthie's favorite sandwich.

And, like Irish Spring, I like it too.

Sounds good to me. Cold salads and sandwiches are good. A cold leftover steak straight from the fridge is also good.
 
The pasta salad sound great!

I hadn’t eaten a fried bologna sandwich for decades and I got a hankering for one earlier this year. I forgot how good they were! Toasted sourdough bread, a little mayo and nice slice of onion... I did remember to make a few cuts in the bologna to keep it from curling up in the pan.

This is a timely thread; I just had a liverwurst sandwich for breakfast. Toasted sourdough, a little mayo, a slice of onion, a slice of braunschweiger and some pepper. It was excellent! Nice having a cast iron stomach! :)
 
A little sliced onion when frying the bologna goes nice.

I never tried cheese on liverwurst but used to to mayo as a kid, I don't like the mayo anymore. I do like it on a slice of good rye bread, a bit of coarse ground mustard, thin-sliced sweet pickle and if not with company some raw onion.

The OPs salad was very similar to what we used to make but no mushrooms and add some thin grilled chicken. The salad makes a good meal, we would serve it warm when fresh and cold the next day.

I think I know what were having for dinner ;)
 
Love pasta salad. I remember one recent summer when that was my dinner most of the time. Spiral pasta, tomatoes, cucumbers, red onions, mushrooms, Kalamata olives, Feta cheese, and some olive oil and vinegar dressing. Kind of a Greek-ish pasta salad. Yum.

One of my favorites was Braunschweiger on Jewish rye with mustard. Simple and tasty. Practically lived on that as a kid, continued on into adulthood.
 
Until I became type 2 diabetic, I would buy the big sticks of bologna, take
the wrapper off and smoke over pecan wood for several hours. Slice thick
and either use BBQ sauce or mustard a slice of onion and then of some
kind of bread for a sandwich.
But now I don't eat any deli or processed meats so you guys will have to
take up the slack, enjoy.
 
Since I have teenagers in the house that are learning to cook for themselves, we have several retrograde meals on our possibles menu. Currently:

Frito Pie
Hot dogs/pork n beans on toast
Diner-style grilled cheese and tomato basil soup

But the one thing I can’t do anymore is bologna. I “overdosed” on that stuff years ago and can’t stand the sight of it.
 
What no SPAM and onion sandwiches? Fried SPAM sandwiches...ever now and then.
I loved Germany when it comes to cold lunch, one place had pickled Herring and onions layed out with fresh Kaiser rolls, no charge as long as you were drinking. Liverwurst was also common, I preferred the Herring and onion combination.
 
A simple pasta salad I like is pasta, Kalamata olives, and fresh tomatoes. With olive oil and Basil. Served cold.
