Past several weeks have been miserably hot, upper 90's to low 100's daily, dry as a popcorn fart, half the state burning up in forest fires and the air choked with smoke, dust, and pollen. Tiresome and tedious.
What to make for dinner on a dismal day like today? Here is what I came up with:
Pasta salad with fresh bell pepper, tomatoes, mushrooms, cucumber, three shredded cheeses, and a vinaigrette dressing, chilled before serving.
Lightly toasted French bread with a bit of spicy brown mustard and a large slice of bologna, fried to a crisp before placing on the bread.
I clearly recall my first attempts in the kitchen, probably 11 or 12 years old, and fried bologna sandwiches were just the thing back then.
As it turns out, these are not bad today!
