For bump protection of handguns, has anyone used the plastic bubble wrap or thin foam pouches (used for packing glassware)? How well does it work? Will oil eat it up?

Can I just soak a fabric sock in silicon water treatment and wring it out dry, to get the benefits of water repellent?

Bubble wrap pouch with small dessicant bag?

Silicon soaked fabric sock?

Both with an oiled gun. Thoughts?

I would not want to wrap a firearm in bubble wrap or plastic foam pouches. They will tend to trap moisture inside and lead to problems. You might try just buying some cotton socks, turn them inside out, spray down with a good oil, turn them right side out and slip you gun inside. I think that you will be a lot happier.
 
You might be better off giving your clean pistol a rub down with a silicone treated rag. I use one made by Hoppe's before storing my just cleaned pistol in its sock.

You still want the sock to perform moisture wicking from your gun, so buy high-quality hiking socks that wick moisture.

You still need to deal with the moisture content and internal temperature within your safe.

I prefer to continue using my Sack-Ups for safe storage.
