A few years ago I walked into the KFC in Raton, NM.
The Grease Trap was backed up.
Several years before I Could go into one.
OK, I did do the drive through a few times!

Deep frying is good but cast iron is more gooder.

I think it holds true for most frying.

I love my schnitzels from cast iron much better than deep frying. My wife wouldn't eat a Schnitzel that was dip fried. Hers were the best.

Temp, oil and breading have to work together to get it right. I guess it's a feel for it, like most things if you do it enough.
