Grapefruit Cake

I mentioned this in another thread and received requests for the recipe.
It's a dangerously yummy Italian family recipe.
My wife typed it up for me.

Grapefruit Cake

Creme together 2/3 cup softened butter/margarine or oleo and 1 3/4 cup sugar or calorie free sugar substitute

Beat in 2 eggs, one at a time

Beat in alternately, equal portions of the following wet and dry mixtures:
3 cups flour, 2 1/2 teaspoons baking powder and 1/2 teaspoon salt sifted together
1/2 cup fresh squeezed grapefruit juice and 3/4 cup milk or skim milk

Stir in 1 teaspoon grated grapefruit peel and 1 1/2 teaspoon vanilla

Bake at 350 degrees for 30 minutes in a greased 9 X 13 glass or metal sheet cake pan

When cool, beat well and frost with the following ingredients:

3 tablespoons fresh squeezed grapefruit juice
2 teaspoons grated grapefruit peel

thanks tons. i really want to try that just for the weirdness factor. sounds even better now that i know it's an old italian recipe. i collect those.
i'm supposed to avoid grapefruit juice because it does something to my meds, but that much shouldn't hurt.

um, will one grapefruit provide enow juice, or do i need 2?

Mrs. Snubby says, " It took exactly one large juicy grapefruit.
The consistency comes out sorta like a cross between a shortbread cookie and a cake."

did you know that grapefruit can interfere with lots of meds?
true story.
i gotta try it because i'm always making shortbreads.
My wife's a home health care aid and they're always telling her to not give her clients grapefruit for that very reason.
 
Wayne, as you know, I have an adventurous pallet. I have never refused to try any dish set before me.

A while back, Ruthie's aunt made a "tomato soup cake".

I actually balked. I couldn't wrap my gourd around it (this coming from a guy that eats jellied eel, blood sausage and haggis).

After a few attempts I took a small bite and proved, once again, that you never know until you try it.

It was really good.

I'll have to get the recipe for you dare-devils out there.


PS: we will try your cake as we loves us some grapefruit.

Stop it, y'all are going to make me gain weight when I just started losing the holiday gain.:) BTW, this post was just an excuse to not have the 13th post in two threads today.

I can understand that.
I've had Asian dishes and didn't want to know what I just ate.

Honestly, I couldn't understand how a grapefruit cake would taste until I had some.
