It has been a long time since I made a cake, since the wife and I have been trying to loose a little weight and get in better condition, now that we are getting older.

I finally reached back into the cupboard and pulled out a box of chocolate cake mix and a container of Vanilla frosting to go on top after it was done cooking.

Mixed it up and even used all three eggs that it called for, I learned not to stake short cuts or to skimp on pastry and cake making, mostly at Reno's high altitude, for the cake to turn out right.

After 36 minutes, the tooth pick test showed it was done and I took it out of the oven and set in on a wire rack to cool, so that I could frost it.
I opened the frosting and let it warm up a little, before mixing the cake batter, so it would spread a little easier and took my time and did a good job, that I was pleased with and put the cover on the 9x13 pan and waited for the wife to come home.

I was in the back room and heard............
"Oh, a cake" !!

That night I cut a nice size section and went to the kitchen table to enjoy one of my favorite treats.

NOT.

If you make your own cakes......
just make sure the package is not two years old.

Had to toss the whole thing out, just sorry that I used all three eggs. Bummer.

Well, it couldn't be stale. Was it just an "old" taste? I figured that stuff was good for ages. We don't do a lot of cakes either, since my metabolism has slowed way down (and my activity). I bet every box we have is at least two years old.

I know I won't eat stale chips or crackers, but I never made the connection to a cake mix. Thanks for the heads up!
