Hope it doesn't kill me

I like my black coffee strong. If its weak to begin not much you can do to strengthen it.

On the other hand its too strong you can always dilute it down with the popular add ons (milk sugar coffemate etc) that many people put in coffee. I have not found the need to weaken down any coffee I have had in many decades!

Absolutely correct. Heck if my coffee is too strong for ya' you can always water it down, but if it's too weak all you can do is dump it out and start over.
Coffee has to be REALLY bad for me to add anything to it.

Checking for new cheese to add to my list, I came across a health list.

If it smells like amonia or has small red dots on it, toss it.
Mold is ify......... some say toss it, some say scrape it off.
When I see mold on bread, I toss it !!

They say cheese has to breath, since it is a "Living" thing.
Being kept in a air tight seal, can't be a good thing, however I have never let one go over six days, in a cold spot, before opening it.

Once open, try to keep it from dring out, if possible with propper paper or foil wrap.

Talerrio is on my list of new cheese to sample and rate but it has six others ahead of it, with two being sheep/goat's milk.

Maybe if I were living on a deserted island someplace and was short of food but I have a supermarket 10 minuets away. I'm not scraping mold off anything that I'm about to eat. Throw it out and buy new. I get the whole aged meat, aged cheese thing but the conditions in the back of your refrigerator aren't quite as controlled as at the cheesery.

thought what the heck. I tasted it. Most definately aged! It had developed a bit of granular texture along with the extreme softness. Yeah it tasted like rank cheese, much stronger that normal with a bit of bitterness.

Oh well! Out came bread and apple. I ate it. I thought it was pretty tasty. However I'm wondering if I need to keep the EMTs on speed dial.

Do you guys think I'll make it?

Depends :) Just in case.
