Jowl Bacon

I've had pig cheeks, AKA hog jowls. French cuisine, I think. Forget what they call 'em. Lemme look it up:

joues de porc

Frankly, didn't make much of an impression on me, after the initial double take. Seemed kinda bland. Probably need a better chef next time.

When I went to a "pig pickin" in NC the cheeks were reserved for the host. Best eating' on the hog. I miss those weekends on a farm with !ive music, free-range country girls, all manner of imbibements and a throwaway sleeping bad.

Sigh...
Say, did the free range country girls provide the throwaway sleeping bad?:)

Had some as a kid...

Jowl bacon is DELICIOUS! Mother used to make it...slice it thick, cut rind off and fry a long time till crisp...has a unique flavor...scramble some eggs in frying pan after cooking the bacon...thanks for bringing this subject regarding jowl bacon up; it brings back wonderful childhood memories of my Mother back to me...now I have to go find some...Roger

We used to eat pig face and blackeyed peas every New Years Day, for good luck thruout the year. My wife's family ate corned beef for the same meal.

I always cook up some pig face for myself, and I absolutely love it! It must work, because I get to eat hog jowl any day of the year I want it.

Tride pig brains as a kid at Granddads,......... uh, it's not for me. Nope. Actually hated it. Pig face,....... De-lici-ous! Got some thawed out and waiting!

Hog Jowl.

Bacon, in its many kinds, is usually liked by folks from rural areas.

My mom grew up, on a farm, circa 1905, but detested any kind of fatty meat; Fresh side, hog jowl, or any kind of fatty bacon, or any food prepared in an unhealthy way. Mom was a generation ahead of her time, and was the first health food advocate, that I ever knew.

This discussion of Jowl bacon, brought back fond memories, of my dad, and his craving for eggs, and home fries, prepared in bacon grease just as his family fixed ‘em. Occasionally, he’d fill a deep cast-iron skillet, and fix himself a mess of potatoes, and eggs, ‘his way’.

I used to enjoy a treat of fried bacon, but haven't in several years. My wife trims every bit of fat from the bacon that she prepares, which reduces the great odor and taste of bacon.

This discussion gives true meaning to the old saying; ‘Live’en, high on the hog’.
