I do like many real cheeses paired with a cellar red, preferably a pino noir.
Beer is for cheese spreads or nachos.
However, this is America we are free to pair as we please.
I do like port.

I could probably get by if limited to five cheeses, but one is too few.

Then again, I'm not a cheese connoisseur, nor am I a fan of cheeses which are particularly fragrant or rich in flavor. I like the basic stuff like Mozzarella, Provolone, Cheddar, American, and Colby.

That said, the best cheese I ever had was a 16 year old aged white cheddar. I'll just say, putting it on a cracker was almost a sacrilege.

There is a place near me that sells this. It is indescribably delicious. Sadly I just can't afford it.
