I do like many real cheeses paired with a cellar red, preferably a pino noir.
Beer is for cheese spreads or nachos.
However, this is America we are free to pair as we please.
I do like port.

A few years back I got lucky at one of my stores.......
for some odd reason, they had a lot of different cheese in the bin from mild to full flavor.


 
Neals Yard Farmhouse cheddar.

Isle of Mull Cheddar

Take your pick: nice, very sharp, either will make your gums tingle.
 
I could probably get by if limited to five cheeses, but one is too few.

Then again, I'm not a cheese connoisseur, nor am I a fan of cheeses which are particularly fragrant or rich in flavor. I like the basic stuff like Mozzarella, Provolone, Cheddar, American, and Colby.

Sorry, "just one cheese" is a bridge too far.

That said, the best cheese I ever had was a 16 year old aged white cheddar. I'll just say, putting it on a cracker was almost a sacrilege.

There is a place near me that sells this. It is indescribably delicious. Sadly I just can't afford it.

One cheese? Geez.
Give me some Havarti. Goes from buttery to nutty to sharper than Swiss as it ages. Good all around useful type cheese. Glad this is all rhetorical speculation as I sure would miss a good sharp Cheddar.
