Just one kitchen knife

My Wusthof six-inch utility. But I sure use others a lot, inc. Victorinox sandwich and paring models.

Nafzger Forge

No question in my mind.....

8.5 inch custom made chef knife.......made by Ben Noffsinger (Principle and Bladesmith at Nafzger Forge).

I own at least ten Chef’s knives.

There’s one word for my Nafzger Forge knife.......”Awesome!”

This is the one I use the most.
It’s an old GI knife, here it is just after I pickled it.

Chef knife for sure. Does most things you need. Other knives are great but can't beat a chef's knife for versatility. Maybe that's why it's called a "chef's' knife.
 
6" utility? 8" chef? 10" chef? Paring? Cleaver? Slicer? Machete?

If you could have just one kitchen knife, which could do it all?

*My* most used kitchen knife is a Chinese vegetable cleaver (from Japan), with a very thin blade ~8" long and just under 4" wide. Does a nice ring if you rap the side of the blade with a knuckle. Had it for years and not even sure where it came from. Wife won't touch it because "it's too sharp".

With many from which to choose, a 4 1/2" utility knife from a house sale, of all places..... Turned out to be pretty good stainless steel and incredibly useful.
