What Exotic Meats or Wild Game Do You Love to Eat?

OK, we've covered beef, bacon, potatos, and now it's time to discuss exotic and wild game meats. Tell us what your favorites are, and how do you prepare them Photos, as always will save a ton of bandwidth, so post 'em if you got 'em. :D

I love horse meat. It tastes way better then beef :)

If I have a lot of time I let simmer the meat in the oven at around 180 degres for around 5 hrs. Makes the meat sooooooo tender :)

But I eat pretty much everything when it comes to meat. I probably don't even want to know what I was eating on a daily base in Afghanistan :D

Anybody here from Maine who enjoys a piping hot bowl of Italian Wedding Bell Soup with moose meatballs? If so, I want your recipe.

I stayed in a motel in Columbus, Ohio on company business for a week and had a company tab for the restaurant out front. Their specialty was exotic meats and msot of what is listed on poll and more. I tried something different each night and enjoyed most of it.
One favorite has been alligator I've only had in restaurants. I've had it deep fried and sauteed. I also love buffalo either burgers or roasts.

Yes.. nothing better then catching a shark at the beach and grilling it there :D
 
I've only had venison, moose, caribou and buffalo. Enjoyed them all. In Alaska I helped a friend load some 30-06s and he gave me a big steak off a moose he had shot with that ammo. My wife fried half of it for lunch, cutting it in two thin pieces. I was a little late for lunch and it came out well done: it tasted like a moose looks. The next day she left it full thickness and I was on time. It was medium rare and I've never had better.
 
I haven't experienced everything on that list but I put my vote for "other". It may sound silly but My favorite game to eat is squirrel. Haven't had it in a very long time but I dearly love it. Of the things on the list that I have had I guess I like deer about the best.
 
The best I ever had was Rocky Mountain Big Horn Sheep.
Second favorite is Pronghorn Antelope.
 
Roast Pheasant

My recipe:

Marinade

3 cups of Apple Cider
1 tsp of sesame oil
4 crushed cloves of garlic
1 tbsp fresh cracked peppercorns
2 bay leaves
3-4 fresh squeezed limes
tbsp of the lime rind

Mix well in a blender. Place the pheasants (atleast 2) in a large covered glass casserole and pour the marinade over the birds until they are covered in the liquid. Put lid on and refridgerate for atleast 24 hours.

Remove birds, discard marinade. Cube some Granny Smith apples and stuff the birds. Place birds in a foil roasting pan sprayed with Pam, breast side down in a pre-heated oven at 400 F for 15-20 minutes.

Turn over the birds, loosely cover with foil, and continue roasting for another 40 minutes or until done.

Quail is my favorite but I like most all wild game. Oh, and did I mention sand hills crane?
