Flying into Manila on black Friday for my Wife's nephew's wedding. I'm Nino/sponsor and I can't wait.
Even with it's overcrowding,poverty and social ills the Filipino people have such optimism and resilience.
Gun friendly is also an understatement in a city where even parking attendants carry Mossbergs.
Even if I don't carry, every one of my BIL's and nephew's vehicles is replete with a firearm and they all know how to use them after countless hours at the many ranges in and around Manila, even their president is a respected competitor on the Filipino handgun competition circuit.
I'm trying to wrangle a tour of the Rock Island production plant and Armscore but their tours are booked solid.
 
Have fun and a sefe trip. Don't forget Al Qaeda is active in the Philipanes and try Balut eaten with a shot of salted vinegar. My Daughter-in-Law is from Cebu. Wife went last year had a great, time everyone from their village was very friendly.

Thanks. I do so enjoy my visits to Manila, especially during the holiday season. But Balut is not on the menu but stuffed crabs and prechon from Sabu is... along with lots of San Miguel.
 
I worked with a guy from the Phillipines, for years.

When we had work dinners he would always bring in this de-boned, stuffed, chicken
that was prepared using some sort of sweet recipe, as in pineapple sweet.

To a person, we always thought that it was the best chicken that we had ever had. :)

It's called chicken relleano and there are so many recipes and the one you describe is indigenous to north Manila barrios.
My wife's family is from south Manila, Paranaque and we prepare a Shu Mi relleano which is stuffed with ground pork,shataki mushrooms,Chinese sausage,water chestnuts,scallions, sticky rice and glazed with Hoisin,oyster sauce and rice wine.
I still prepare it at this time of the year and serve with toasted ensamadas.
I go to Manila to eat and if still able Dive.

Stir fried with toasted garlic,ginger and a little tuyo mansi over garlic rice. They are really a unique treat.
We have reservations at Spirials at the Sofitel hotel where the buffet includes a Foie Gras and Champagne station as well as a mantis shrimp sashimi served with a Uni reduction. I already packed my BIG jeans.

I will Jim. There's a Sari Sari just around the corner from the family compound that serves the coldest San Miguel and pork BBQ until the wee hours of the night and into the morning.
