What are the correct factory grips for the 28-2? Square cut Magnas, rounded Service Grips, or either?

It would depend on your serial number.
Iirc the dash 2 changes occurred in the early 60's during the "Diamond" stock era and went through the 70's until the dash 3 era started sometime around 1980-81 ish.

The correct stocks would be whatever the particular Model 28-2 had when it left the factory. Most would have Magna's, but target stocks were a factory option.

Here are some examples of a Highway Patrolman and Model 28-2s from 1954 into the late 1970s. Those are all original factory magna stocks, except for the 4" that's wearing some Jim Badger combat stocks. As stansdds stated, factory target stocks were an option but I haven't seen many Model 28s wearing them.
