A popular idea from last year has been making the innernet rounds, this is my wife's 3rd batch since Thanksgiving last.
Sliced onion and cucumber with some smashed garlic and homegrown dill in a simple 3/1 salt/sugar in 1/1 vinegar and water brine. Terrific on any kind of sandwich, Lord knows what else it can slide into. Could probably doctor it with some drips of mustard or siracha, celery or mustard seed but we like it as is.
The jars are clean, not sanitized. Stuff stays in a fridge just fine, albeit a bit soggy.
MizAnna wondered aloud how it would stay safe but it's not likely we'll ever keep it long enough.

I tried this and it rocks!
Thanks for the suggestion.

Glad you like it!
I inferred from Rusty's post that the mixin's have been around a while, not surprised it being so simple.
Miz Anna took some to a family reunion last Thanksgiving to share, turns out the lady of the house has just made up a batch as she had stumbled onto the recipe recently on the Net.

Might make for a good thread if anyone knows a simple recipe for a relish or veggie mix that doesn't need to go thru the canning process. I enjoy chow chow but only get store bought when available.
