In the midwest the recipe for 'tater cakes starts with left-over mashed potatoes.Can you explain your potato pancakes please?
My mom used to make what we called potato pancakes , I loved them !
They were pretty heavy , you’d only eat a couple at a meal I vaguely remember that they had a very light dusting of flour or something on then similar to what you may find on English muffin
My mom had a brain injury caused by stroke so she doesn’t remember .
I’ve tried googling the recipe but am referred to ladke which I don’t think is the same
Form the thick, cold mashed taters into a patty, flour them on both sides, then throw them into a skillet of hot oil. Vegetable oil OR bacon grease - whatever you have on hand.
Brown them on both sides, and VOILA' - you've got 'tater cakes.
Kind of like pancakes, but different.
As I understand it, the original recipe came out of the depression era. In those days, you made the most of everything - including left over mashed potatoes.
So after having mashed 'taters for dinner, you had 'tater cakes for breakfast the next morning.
