Pedals too close together.

I have a 2016 Toyota Camry XLE V-6 that I bought new. Great vehicle with super acceleration and ride. Recently bought a new pair of Saucony running shoes. Been wearing that brand for years. I wear a 11 1/2 medium. Have found that the sole almost touches the brake pedal when on the accelerator. A couple of times recently had the accelerator depressed a bit with foot on brake. I now understand how people accidentally drive their cars through the front of the 7-11. Anyone else with this problem? I am 72.

The petals are close together on purpose. I think it’s called “heel/toe”.
The reasoning is if you’re on a road course, it you can have one foot on both petals at the same time.
I’ve played with it a bit in my Mustang on one of the curvy roads around here. It takes practice.
 
That was one thing I encountered when I was test driving different vehicles the last time I went to get a new car. I think its a combination of smaller vehicles and front wheel drive that is leading to less foot room. I have big feet and there were several that didn't have enough floorboard room to keep my big ol left foot from getting under the brake. I also encountered the same problem you posted about.

Big feet + shoes with soles that flare out for stability have a big (forgive me) footprint.
Get some slip-ons that aren't built like snowshoes.
 
Yes, I really have to be careful when I’m driving a car, my 13W’s take up a lot of room.

Heel and toe applies to cars with three pedals. I assume OP's Camry is an automatic. Heel and toe isn't necessarily heel on one pedal and toe on the other. It's better for me to rock my right foot sideways while on the brake to blip the throttle for a downshift. It works much better when braking hard so your foot has a firm support. Not only do the pedals need to be close enough, but at similar heights off the floor.
 
My new car also has pedals close together, it took a couple of weeks, but I got used to them and no longer think about it.
