I buy those quart jars of hot pickled cucumber chips to use on salads. Once the cucumbers are gone, I dump as many hard boiled eggs as will fit in the jars, and let them sit for a couple weeks soaking in the brine solution in the fridge. They come out great.

For me.......

Strubs pickled eggs, comeau pickled herring, bicks sweet mustard pickles and onions, fresh chilean shrimp with ritz crackers and smoked salmon. Washed down with diet A&W root beer, or diet mug root beer.
 
Here in Pennsylvania the newly moved in are easily identified by their comments:
1. What's with the purple eggs?
2. What the heck is scrapple?
3. Lebanon bologna?
4. And until recently " Why can't I buy beer in the grocery store?"

Pickled beet eggs are great. Used to be standard bar fare at the older working man's bars, along with pickled ham hocks and pigs feet. Forget about finding any of them in todays corporate establishments.
I've had yellow mustard eggs, which were so-so, but will try the turmeric version.

I'm looking for a good recipe for pickled meat. What I have is 150 dove breasts and I thought I would try pickling some of them.
As a child we ate a lot of home canned and pickled meat but I was young and never learned how mom did it.

I helped my grandmother pickle fish and pork, but never any other meat. I did a quick net search and didn't find one for pickled dove breasts, but I did find a few for pickled chicken. I think you could adapt one of these for your needs. Here is an interesting one that I may try and may be good for your purposes - it's for pickled chicken hearts and gizzards:

I wonder how may here know what they are? Or anywhere for that matter.
Still see them at the supermarket now and then. Haven't seen any at the bars of late. They've gone the route of ham hocks and pigs feet. Been replaced by edamame and artichoke dip, I guess. And other healthier concoctions.
I could get though one or two, given an adequate supply of beer to wash them down! They are anchovies on steroids.:D

Hard-Boiled eggs
I had lost my appetite, for a couple of days, but you folks have revived it.
You folks have filled my head with endless ideas for possible new hard-boiled egg recipes.
We use the condiments, green olives, dill-pickles, jalapeno-peppers, hot yellow, banana-peppers. All of their juices would be scrumptious to soak hard-boiled eggs in, singularly, or in any combination.
One of my wife’s special recipes, is deviled eggs. Prepared, with or without, jalapeño peppers.
I must stop, as I fear that, I’ll drool on my keyboard.
