OK, the holidays are near full upon us..

It's a serious time for Polish Sausage with all the fixin's, sauer kraut, mashed potatoes, pickles.

What's your favorite sausage?

Mine as always remains Slotkowski's but hard to find.

Not truly a Polish sausage but I've also become fond of Conecuh Brand sausages, pronounced co-neck-uh.
 
I like andouille, the cajun sausage. Don’t get ‘em that often, but whenever I get a bunch of sausages to grill up, I find I like the andouilles the best.

Got a bit of spice to ‘em, which I like.
 
Used to take venison in and have it made into what the processor call "Oktoberfest" sausages. Best sausage I ever had. I remember when I first moved out of the house, me and my roommate didn't have money for food. We lived for two weeks on nothing but coffee and those sausages. He brought home packets of mustard from the lunchroom at his work, but I usually ate them plain.
 
The sausage my grandfather made, along with the white wine he made, on the kitchen table every Sunday, when we used to go visit as kids. I was too young for wine, not too young for sausage, meatballs and Ronzoni. :)A butcher by trade, he taught my mother how to make gravy as well. And we always left with a quarter each. :cool:. I miss them both every day.
We don’t eat much sausage nowadays, only on Christmas day, after the Seven Fishes (which is over the top and I don’t care for) @ the relatives, on the Eve.

I was the crank mule many times on one of those.
 
Fresh Polish from C&R's Meat Market on the Southside of Milwaukee. I just had a buddy bring me back a 1lb link. It's going in the crockpot with Frank's Kraut. You can smell the garlic right through the ZipLock bag.

Growing up, we ate Swedish sausage mostly.

In my twenties, I worked as a part-time cook in a 3.2 joint during the lunch hour. I made a load of polish and kraut sandwiches on crusty rye.

Today, I like to keep it simple, so polish sausage with kapusta, a butter braised cabbage with onion, bacon, and a some caraway seeds; along with mashed or baked potato and fine green beans. Apple crunch with ice cream makes a nice finish.
 
I'm often dismayed by threads like this. Why? Living up here in the NW corner, many of these products are unobtanium. I was hopeful when I read that Freddy's carries Conecuh. Georgia yes, but not the local Freddy's. Still we have some good ones. My favorite is Isernio's https://isernio.com/ and a close second is Silvana Meats https://silvanameats.com/price-list/deli-cuts/

Despite having a good breakfast, I'm hungry already.

Conecuh, from Conecuh County, Alabama, is some of the best I have ever had. Also like Polish sausage, and Prasky from Crawfords in Chicago. They ship to everywhere and great stuff.
 
Man, there are many that I like. Boil in beer, then put them on the Weber. With taters and Kraut.
 
I have not found the Polish sausage that I really like, most of it being too finely ground. I much prefer the Hungarian. My dad would make it with a 50/50 combination of deer and pig. We shot the deer and a neighboring farmer would provide the pig, cut in half lengthwise. Throw that half a pig over your shoulder, take it down in the basement and go to work. Other than that, the best I have ever purchased by far is from Hirs Sausage Market recently relocated to FL. They still come to the Hungarian events in New Brunswick, NJ, so those are the times to stock up.
 
I prefer my homemade smoked venison/pork kielbasa. It's a little leaner and courser ground than most commercial products. It's made with my great great grandmother (slovak) recipe and sausage stuffer. Always with my mom's perogies my brother's homemade sauerkraut and stout.
 
Moved out of the Pittsburgh area in 1988. Arsenal Kielbasa (made in/near the Polish HIll section) is one of the things I really miss. What the big meat companies produce isn't even a pale imitation.
 
I had a now deceased long time customer come in one day, and I asked him what he’d been doing. He replied he just came back from a local meat store, where he’d bought 50lb of their kielbasa. He raved about how good it was and said if I ever tried it I’d never by supermarket kielbasa again.
Now this guy was a nice guy but when his wife passed away he went off the deep end. Always filthy, dirty clothes and smelled of BO, and stale urine.
He says, wait a minute, and goes out to his vehicle and tears off a 10” piece, brings it in in his filthy crust hand, and lays it on the counter, and says here, try this.
I begged off saying I had just eaten and it have it later.
I gave it to another customer for his dog, and it wouldn’t eat it.
 
Last weekend four of us got together on Friday and worked on our annual sausage party. We put up over fifty pounds of sausage in links, then smoked it Friday and Saturday. I picked mine up Sunday...it turned out amazing as usual. Our favorite is "Indian Sausage", it contains pieces of potato and corn, with a pork base, we used pork butt. We didn't have any bear meat this year, but used up some left over near freezer burned Elk and threw in some lean beef. It always turns out great, people outside the clik dont get any, its that damned good. My wife is near as stingy with that sausage as she is her deep water sea bass and NOBODY gets any of that.
I found an excellent store bought sauerkraut at a specialty store the other day. Bubbies Homemade Sauerkraut...it is amazing.
 
This thread got me "in a mood", so while Christmas shopping with Bride yesterday we stopped at a rather uppity local butcher shop. Wasn't impressed with the Polish they had displayed, but found myself drawn to a fine looking ring bologna. Served it with some cheese pierogis and a Belgian Triple for supper last night.
