Some times you just plan a dinner and it goes better than you expected.
Saturday;
tired of Turkey, so I fired up a cast iron pan for Lamb chops and another for a Rib steak for the wife, since she does not really care for lamb.
She was in charge of the veggies, while I messed around with the meat.
Put some oil in the pan to heat and chopped up seven cloves of Garlic, to add flavor to the oil for both meats, that had a sprinkle of sea salt just in case.
Before hand I sprinkled the meat with sea salt and pepper plus a secret spice, to rest and do it's thing before it hit the pan's hot oil.
I usually let the wife's steak burn to a crisp before putting in on a plate but she jumped up and said she thought that the oven cooked steak was done and I just sat there and thought... ok?
I got up and put my lamb on my plate and we sat down to enjoy a non-turkey meal with a little Garlic on the side, along with a new bottle of wine, that we never tasted before........
that the Raley's wine man said was a top seller.
I hate to say it but the lamb was so good, I did not even save one bite for the dogs.................
but the wife's steak was so big.............
that they had lots of nibbles and a little for their plates, later on.
An extra, is that the neighbor went fishing with his father at Pyramid lake and they pulled in a ten pound cutthroat, that his father put into the smoker. He gave me a an "Air pak" to try out and see if it passed our test.............
We catch and smoke all kings of fish and try to see who comes up with the............. "Get out of here" hunk of fish.
So far a good year and all safe and healthy, minus a few visits to emergency............
