Specifically has anyone had the Master Action Package done on a Centennial such as a 642, 640, 332? Also, is there a difference in the benefit on a pre-MIM vs a MIM gun? I have done some work on K and N frames that had nice results but I really don't want to sacrifice reliability when it comes to the carry guns.

In my experience, you can get just as much or more benefit from a spring kit as an action job on J frames, assuming the gun doesn't need any adjustments or repairs. Guns from all time periods can work fine if they are in proper mechanical trim.

You always want to function test ANY gun after it's been worked on for anything before you actually need it for carry, duty, competition, hunting, etc. It's far better to discover problems when you are close to home, have or can get parts, tools, and time to deal with it, or just grab a different gun for the time being.
