What to cook on the grill?

Well my oven has been broke for a couple weeks. We are trying to decide what appliances we what to go with.

In the mean time I have been using the grill and eating out.

So I have been experimenting with what foods to cook on the grill. That you would nominally cook in the oven. We don't eat much pork. but have done the usual burgers, dogs, and chicken. The burners of the stove still work so we do cook the sides on the stove top.


Here it is. What unusual foods have you or do you cook on the grill?

I've done.
Pizza
Bread sticks
and baked cookies

I may venture to cook some bacon up on the grill in the A.M.

Grill pizza is excellent. It takes some experimenting for the right temp, but once you find it you'll never call delivery again. I have done cinnamon rolls on the grill a time or two. Watch them carefully, they will burn fast. One of our favorites on the grill is to wrap green beans or sweet corn in foil with some butter, sea salt and cracked pepper. Start them a few mins. before your main course. They are delicious. We purchased a stainless steel skillet that has slits and holes in it to use on the grill. Shrimp works pretty well in it. We have found a recipe for lasagna on the grill. Will probably try it once it warms up a bit. Happy grillin! BTW...as long as there is a longneck involved pretty well anything on the grill is good
 
Oh and I forgot if you have a griddle, grill pancakes are great too. The first time I attempted them I used one of the wife's baking sheets. It worked, but I was in the dog house for awhile.
 
Peppers, onions, thinly sliced carrots, garlic... Let them soak in some balsamic for a while and add some salt. A grill pan is needed.
 
Grilled fish. Easy and fast.

Get you some fish. Catfish will do. Marinade over night in Italian Dressing. Cook only until done. In other words be careful or it will over cook. I use a burger clamp to keep it from falling apart.

Better cuts will yield better results. I like Tuna Steaks done this way. Now were talking awesome.

Shrimp is really easy too.

BTW The marinade over night will cure the fish so basically you're only browning it. It don't take long. Hint.... Tuna is Sushi. Catfish has more fat and will take a little more cooking.

Tuna steaks rock on the grill....sadly, they are stupid expensive but dang are they good. I usually blacken or dry rub them (my wife likes them crusted with sesame seeds) and cook them extra rare (just long enough for some grill marks) on a super hot grill. Other fish (salmon, sea bass, shark) and shellfish were meant for the grill!

We do a lot of kabobs. There's no limit what you can throw on a skewer!

I've grilled a bunch of stuff on my stone. Pizza, bread, cookies, grilled cheese (on the stone or directly on the grates)

I make a grilled sandwich using large slices of french bread (lightly brushed w/ olive oil) a bit of mayo, thin sliced turkey breast, guacamole and sliced roasted red peppers. It's amazing!

We do a lot of grilled veggies (thin, long-sliced eggplant, zucchini, string beans, asparagus, red peppers etc.). I stuff banana peppers with bread crumbs and grated romano (or similar cheese) and grill them up too. Drizzle all the above with a bit of olive oil and hit them with some salt and pepper and good to go. Of course, corn on the cob is great on the grill. Many recipes for it around.

For dessert try pineapple, pear, banana or peach slices. Their natural sugars "caramelize" up nice and are very good. Warm peach slices with just a touch of "charring" and a glob of vanilla ice cream or grilled banana, raspberry sorbet and a splash of vodka are off the charts.

There are no rules to grilling. Anything goes.
 
Spaghetti--Last year while remodeling our kitchen eating out or ordering takeout got old. So one night my wife tried spaghetti and garlic bread on the grill.
It actually worked once she got the pot of water to boil. Browned the ground meat in a skillet then added the sauce to it on the grill. The bread was done on an older cookie sheet.

It tasted great.

I haven't tried em all yet, but last summer when I started firing up the grill and cooking dinner for the wife throughout the week... well, she just thought I'd become a master grille chef!
 
Break out the baby backs (This recipe calls for 2 racks):

Alnamvet's Only Way To Grill Ribs

* Place ribs in sealable heavy guage plastic zip bags
* Prepare marinade:
1 cup Ponzu
1/2 cup fresh lemon/lime juice
1 tbsp fresh ground peppercorns
4 large garlic cloves finely minced
2 tbsp wasabe paste
1 tbsp sea salt
1/4 cup Olive Oil
1 tbsp Worsteshire sauce
1/4 tsp sesame oil
1 tbsp fresh minced ginger
Mix well and pour in bag. Zip close the bag while removing as much air as possible. Massage marinade into ribs, then refridgerate for atleast 24 hours before slow smoking.

* Voila.......

Best fish you ever had. Haddock, salmon, whatever. Rapped in tin foil, seasoned, with a big chunk of butter.

I see you are in west GA you might have to substitute Oysters of the mountain variety. I sure won't guarantee they will be good. I did have them grilled in Central America not on my favorites list for sure.

I custom-built an oven to sit on top of our Coleman stove.
Mrs. Hillbilly uses it to bake fresh pie when we camp.
That gets attention. People walk by your site and ask "Is that apple pie I smell?"
"Yup. Sure is."
 
Beef it's what is for dinner. I built a brick oven in the back yard it's wood fired, pizza, pies, BREAD, any thing and everything. It can get to 700 degree inside oven.
 
I've grilled turkey breast a few times. Go with the indirect heat and have a tinfoil drip pan underneath. I use the kettle type barbecue for turkey breast. It doesn't hurt to place a couple strips of bacon over the breast, too, to keep it moist.

During the cooking process, I'll slip a few chunks of apple wood that have been soaking. The fruit wood smoke gives a nice flavor to the turkey.
