Who else pickles?

Awesome! The Mrs. and I love beets, both pickled and fresh. I’m sure they’re fabulous.

We live in a subdivision, so we only grow herbs and a few tomatoes. Our beets come from the store or a farm stand. We have pickled fresh asparagus, cauliflower and cucumbers, but we buy those too.
 
We make "sweet/hot" pickles with cukes out of our little garden. Your beets make my mouth water. Where to you find the lids; they're nowhere to be found around here.:D
 
We've been pickling beets for years. A batch usually lasts a couple of years so I don't grow them every year, however this is one of those years and they are doing great.
 
The folks up in Utah do "Dilly Beans"................

that uses long Green String Beans and LOTS of other spices and stuff
to pick them up a "notch" for when they are enjoyed six monhs or more, down the road.

Many of their cousins add.........
carrots, cauliflower, R&G peppers, to the jar for a "Grab Bag" fixing.

Canning is a fun "Art" to learn.
 
Pickled eggs.

My wife wanted a chicken coop, so now we have a barnyard full of chickens. We have several different types of chickens but the bantams lay the best eggs to pickle.

No "food" I hate more than beets. I find them so disgusting that I would support a worldwide beet eradication program.
 
My first thoughts about "who pickled" was from the comments made here. Some of you might get "pickled" in another way. :-)

I like beet tops early in the year. We used to plant leaf lettuce, beets, radishes, turnip greens and mustard greens all together in a raised bed. When they were about 3 maybe 4 inches tall, I would cut them with a pair of large scissors and have a great fresh salad.

Yep. Ms. Judy does "dilly beans" and pickled beets. I usually don't put in a lot of beets in the garden each year. Just a couple of short rows...enough for Ms. Judy to do a a few pints or so.

I guess we all have different tastes, but pickled beets and dilly beans from the garden are always enjoyable side dishes here at the ol' homestead. :)
 
It’s just the Mrs. and me here now but I still have to grow my own veggies every year.Lettuce, Hot peppers, cucumbers, beets , tomatoes, spaghetti squash , zucchini, wax beans and sweet potatoes. All but the spaghetti squash and sweet potatoes get canned and or pickled for consumption during the winter months. Love me some pickled beets.
 
haven't done the purple finger pickle packing since I was a little kid helping mom, grandma and my aunts.. stayed stained for a long time.. I still enjoy them.. just don't make them
 
You might call this Pickling,........ I love eating "already pickled okra from WM, and it comes in a huge jar.

Once they're gone, I toss in some boiled eggs, and pickle them!

My Dad used to love buying ring bologna and pickling it. We'd set down with a jar of that stuff and a box of crackers and go to town!

Maybe I'll try that myself when I finish the next jar of okra.
 
I think my mother pickled most everything that grew in the garden or orchard. Cucumber pickles of all kinds, sweet, dill, whole, sliced. Also beets, green tomatoes. But the best things were the sweet fruit pickles, crab apples, watermelon, peaches, and pears. Over the years she got hundreds of blue ribbons at the county fair for her canned goods. Even took some to the State Fair a time of two. I did some during my years in 4-H and later when I had a garden.
 
The last time I did any pickeling was election night 2020.....me and my buddy Evan Williams. Went to bed feeling pretty good. Next morning.....not so much, as everything had changed. No pickeling since then!

Sounds a bit like my grandmother, who pickled most anything, including herself; "A little beer for the herring, and a little beer for me". Her pickled herring and her pickled cherries stand out in my memories. :D
 
Was busy today for about 2-2 1/2 hours. This will last about a month and a half. Jalapeños, habaneros & poblanos. They are nice & hot as I was testing as I cut them, Larry
