I contacted Dan Dietrich (mentioned above by Oldengineer and Truckman) with photos of the two grips. On the one with the crack, he feels that he can "erase the crack a bit, ...but can't promise that it will be 100% invisible". On the grip with the chunk missing on the bottom, he's done similar repairs in the past, but is no longer doing them, because he was never happy with the results. So, I believe I'll send the cracked grips to him.

Thanks to everyone for your help, and I am still looking for an artist to repair the M&P grips.
 
Not to sound too naive, but can't you use a quality wood filler on the missing chunk, light sand and texture to match surrounding texture and stain/varnish to match? Or does the entire stock need to be stripped and redone?

That sounds totally reasonable to me. Maybe I'll just try to fix it myself.
