World's Best Squirrels, Followed by the World's Best Summer Drink

Now I know y'all squirrel aficionados pretty much favor your squirrels fried in a pan, with drippings left over for the gravy. Nothing wrong with that, and I've eaten my weight of 'em cooked like that, but next time you have a bunch of nicely head-shot tree rats, try them skake-n-bake style using Luzianne Cajun Chicken Coating Mix. You won't have the fixin's for gravy, but once you eat squirrels from the oven you won't miss it!

On a really hot summer day (like we're having just about everywhere right now), nothing beats an old fashioned Florida Rum Runner, as originally concocted back in the 50's at the Holiday Isle Tiki Bar in Islamorada. Here's what you do...

Place the following, in equal proportions, in a blender full of ice:
Clear rum
Dark (aged) rum
Blackberry brandy
Banana liqueur
Orange juice
Pineapple juice


Next, add a bit of grenadine for color - just a dash to give it a happy pink color, too much grenadine will spoil it. However, if you don't add just a bit of grenadine, your finished product will look like a latte coffee, and that just ain't right!

Blend it all up real smooth. Pour into a tall glass and drink up to cure the Summertime Blues!!

If you want to make it more 'interesting", substitute the dark rum for 151 Bacardi. Even more interesting, substitute BOTH rums with the 151.

If you're trying to forget about your ex-wife taking off with that slick-talking personal trainer and your dog & pick-up truck, and you've already used the 151 to replace the 'normal', grade-school rums, just add a shot of 151 as a topper to your finished drink. Be careful, as rum runners so constructed will make you take back stuff you didn't even steal!

^^^^ I always enjoy wild game. Out here on the farm, I will make squirrel or rabbit meals and people either understand or are outraged. Haha.

If you know how to cook wild game, it is some of the best flavors. (know how to prepare it too...).

I like goose pressure cooked with the cheapest beer you can find and salt and pepper. Makes a very good meal that a lot of people are no longer aware of.

I always liked squirrel and rabbit. Usually in a stew like hassenpfeffer, but sometimes just some oil and butter in the pan. Quickest way after having shot a bunch.
Nobody around me will eat anything like that.
 
My Key Lime tree is going full production so I made a little cake today.

Key Lightning Cake,

Cup of sugar and two eggs. Beat them together.

Add a cup of flower and a tea spoon of baking powder. Beat it. Your starting to want a mixer at this point.

Slice and squeeze some KL's and add a stick of melted fake butter. (oleo)

Mix together and put in a 9X9 pan and bake at 400 for about 20 minutes. (we're baking so you should know to preheat the oven. Another reason to read ahead.)

Remove from the oven and let cool.

After it cools take a bit of KL juice and make a glaze with some powder sugar and drizzle it all over the top. This is the best part. Let it cool some more and give it a good dusting of powder sugar for looks.

You can sprinkle some nuts on top before baking too. (always read ahead)

What you get is a simple cake that's good with coffee in the morning (about noon beach time) or for a desert anytime.

I know, pictures or it didn't happen. The camera fogged up when I walked outside. :D
