Zucchini!

When I lived in Spokane, WA, my little backyard garden produced more zucchini and beefsteak tomatoes that we could ever eat. I used to take grocery bags of both to work at the AF base for my troops, and all of it would disappear in a hurry. Glad to put them to good use.

So when you finally retire are you gonna move back like my uncle and just about every guy I ever met in Spokane that served at Fairchild or Geiger? Did you live in the valley, stuff that is planted in that rocky glacial soil seems to grow overnight.
 
I'm an old guy. During the War everyone had a Victory Garden. I remember my Father sneaking around at night leaving zucchini on the neighbor's porches at night.

I think this is a possible reason why, to this day, I don't like squash.
 
I like them about 6-7" long and trim both ends and slice in half, lengthwise.
I then hollow out the middle with a spoon to be filled with........
meats, other vegetables, cheese, bread crunms etc. with olive oil drizzled on top
then placed in the oven with a alum. foiled cookie sheet which makes for a easy clean up job.

I like mine under the broiler to brown a little, before removing but just cooked is good also.

Oh yes! Stuffed zucchini!

I try to harvest mine before they get over a pound or so, but occasionally have one that evaded detection until it was 3-plus pounds. Cut in half lengthwise, scoop out the seeds, fill with bulk Italian sausage, top with marinara sauce, bake about 45 minutes at 325F. Garnish with romano or parmesan.

For a milder result just about any favorite meatloaf recipe can be substituted for the stuffing.

Edit to add: I started this thread two days ago, probably 24 hours after my zucchini blossoms started showing off big time. Today I see a bunch of zucchinis forming at about thumb size, and growing by an inch per day! Pretty impressive show to watch!
