Beans, of course.

Ingredients:
2 lbs. dried navy beans (OK, if you prefer pintos or red beans that is good too).
3 lbs. leftover ham, diced
1 ham bone saved from the Christmas ham
1 large onion, diced
1 large bell pepper, diced
2 cans diced tomatoes
1/2 lb. celery, diced
1 level tspn. garlic salt
1 level tspn. Lowrys seasoned salt
1 level tspn. Allspice

Preparation:
Soak beans overnight, then rinse and drain
Boil ham bone in large saucepan with water to cover (1.5 qt), about 1 hour
Drain broth from ham bone, this is the base to start the beans
Pull remaining ham from home bone, add to broth
Add beans to broth, all in a large crock pot
Add canned tomatoes, diced onion, bell pepper, celery, spices
Add diced ham
I want liquid to completely cover all contents plus about 1".
Stir contents well, cover crock pot and leave it closed

Cook:
Covered crock pot on high, 3 hours
Turn crock pot to low, allow to continue another 3-4 hours

Makes about 6 quarts, or about 24 eight-ounce bowls.
Good with fresh cornbread or crackers and cheese.
Leftovers freeze and reheat nicely. Personally, I think they are better after freezing and reheating.

No crockpot? No problem. A large stock pot or dutch oven kept at a low bubbling boil will work just as well.

While not quite that cold, it's been chilly here this past week and likely well into the next week. I'm planning on having a pot pie for dinner tonight, and maybe some hot chocolate for dessert.

I got Spaghettios.

Well, at least you're not eating it straight out of the can.

Not that I've ever done that before...

The bean recipe sounds good. May have to try it. A GOOD friend sent us a Honeybaked ham ...mmmm good. When it's about done for eating we can make some of them beans. What I would also like is some of my wife's lasagne and a loaf of her home made sourdough bread. Sourdough pancakes later today with aigs right out from under de chikin. .

I pan fried and oven finished a couple filets for Mom and myself. Some mashed potatoes with butter and a bowl of cantaloupe finished it off. Decided to try the pan and oven method for the first time because the sleet had just started outside. Not looking forward to the coldest temps in 70 years here in SE Texas.
