On a blued pistol I very much like high quality rosewood. Also nice is elk horn w/ no bark. On a blued pistol of very high quality, I would think ivory would be very nice. On a stainless steel revolver I very much like rosewood or else Goncalo Alves. A nice dark walnut with lots of color and well accented grain is just about always right for either blued or stainless steel.
 
I love stag.....scarring makes for a good grip but the edges are smooth so it doesn't grab on clothing...of course, my j-frame magnas do pretty much the same thing....but stag looks cooler...:)
 
For looks, I don't think anything beats aged ivory. It just screams class. For looks and carry Stag all the way. For open carry and heavy recoiling guns I like goodyears with the full backstrap.
 
I like my thin buffalo horn grips, from India, on my stainless Ruger Old Army blackpowder pistol.

Rubber Hogue grips...on my 454 Super Redhawk and S&W 38 Special revolver.

Rosewood grips on my 357 S&W snubbie.

G-10 laminate grips on my two 1911's.

I've seen some mammoth ivory grips that were beyond outstanding, but for revolvers they start around $625.00. That's a little high for cosmetics, so I'm sticking with S&W wood with Tyler-Ts.

I think the most exotic set I ever saw was Narwhal 1911 grips for around $1200.

The only ones i'm personally not fond of are pearl.

I like stag the most and ivory.

Surprisingly, the imitation ivory grips are nice too. YMMV
