Anyone ever like salmon loaf? My grandmother would make it and it was my favorite thing she ever cooked. I tried making my own last week and it came out ok, but it seemed a bit too gamey. I have been looking at recipes but most are about the same so I am not sure what I am doing wrong or if it just needs more work. I don't recall hers being so gamey but it has been a long time, she's been gone for over ten years and I bet its been 20 since I had hers.

Sorry...no recipe...but I don't have fond memories of salmon loaf as a child on no meat Fridays. My german mother would use canned salmon and not sure what she put in it...but she cooked the heck out of it. It was awful. My Dad would take pieces and feed it to the dog when Mom was not looking.
 
Sounds like the Salmon Croquettes we got on Fridays when I was in grade school. Hoo Boy they were popular. :rolleyes:

'Course if the loaf was made by the OP's German Grandmother it was undoubtedly a lot better than what we got in the cafeteria.
 
Salmon patties are simple and tasty...Basically canned salmon drained, in a mixing bowl add a whipped egg or two, mix like trying to make a meatball...Then add crushed saltine crackers, pepper...
There again, incorporate all the ingredients by hand forming a burger like patty...Pan fry and enjoy with a squeeze of lemon...
 
Been riding my wife's food train for almost 40 years. 15 years ago the engine derailed. You have all heard it; "oh this sounds good". I think she was reading "Arnold Ziffels cooking with troughs".
It was " Impossible Salmon Pie". The first word should have been a warning. No one, including my wife, could eat it. The cats tried to cover it up and the dog said "no thanks, I just ate some homework."
Lesson learned. She is now only allowed supervised visits with canned salmon.
Wedding vows should include;"I will be your culinary guinea pig till botulism do us part".
I love my wife.

Yes, I will even squish it a bit through a wire strainer to get the extra moisture out. Bread crumbs work too, in lieu of the Saltines. My mom made
them when I was a kid, and it was an 'ok' way to get some fish. I just had
some last week.
 
Don't do a loaf, but like my patties-- Cajun / blackened seasoning helps me here along with some green peppers, onions and a few other things-- getting the oil HOT will go a long way for you-- Now I'm hungry-- :D
 
I've found one of my favorite salmon recipes( other than still twitching fresh from the river) is to make a sauce out of a little mayo, Dijon mustard and fresh dill. Salt and pepper the filets and spread it on top and bake for 7-10 min.
It is good!
 
I can my own Kokanee's. It is great with a clove of garlic added and some seasoning salt before canning. I eat it on crackers, as a sandwich or by itself.
