Default Say Cheese

Went out this morning and went crazy again.

A family member has a offer to move to the Austin Texas area
for a large "Bonus" and they finally found a new house to move into.
Today is the last day to give hugs and kisses and I wanted to bring some top notch cheese to the going away party.

Here is a picture of the new types that I found to try out.
It should be interresting.

I will post later on my taste ratings.

Austin TX, or California In The Middle as it might also be known. Not my first choice of place to live in Texas, but sometimes future financial security trumps other considerations.

I buy Swiss cheese by the 5-to-8-pound log, and 2 pounders of Sharp Cheddar (white), pepper jack, & Munster. Water crackers by the 3-pound box. Preparing for the 4 kids, spouses and 9 grandkids! That Swiss will also go on sandwiches with the Easter Ham come Monday!

Raising the kids, I kept 4 different cheeses in the 5 pound logs for the kids to make sandwiches and snacks. We went through 8 to 10 pounds of cheese and 5 gallons of milk a week. I guess that's why the boys are all 6'1" or taller!

Growing up, I always wanted to live in a home where all the other kids came to play. As an adult I succeeded, by feeding everybody well and having a cute daughter, along with paintball every Saturday weather permitting!

A few years ago a Cousin sent me one of these.
I have done the Cheese Dance a number of times but he never sent me another one!
‘Celebrate a Mississippi State tradition with Edam cheese! The tradition dates back to 1938 when Professor F.H. Herzer ordered ten teakwood hoops (molds) from Holland, and the Dairy Science Department began producing Edam cheese using fresh milk from MSU’s own dairy herds. This pale yellow cheese is both savory and mellow and is sure to be a delight to everyone!’

We have some decent local cheeses. Some pretty good stuff comes out of Oregon, and of course Cougar Gold.

I'm a huge fan of Cambozola and dried figs.....

During their summer picnic, local church here used to have a limburger sandwich booth. Put it and a beer booth down by the ballfield.

I enjoy block limburger - With horseradish, sauerkraut, sweet onion on dark rye.

Breath mints are no match...

So far the three ladys in the group think the Baked Lemon Ricotta is just out of this world and don't think of it as a cheese, but a light desert.
Flavor: 8 Taste: 9.3

The Toscano soaked with Syrrah was a nice firm cheese with a well balanced
medium sharp taste, that we all enjoyed. Flavor:8 Taste: 8

MsNative's grandmother received 5lb. blocks during the Reagan years. She was of northern Italian heritage born on Mulberry St. NYC and would have nothing to do with processed cheese so passed it along to us.



A real boon for a young family this was a nice addition to the pantry, a cross between Velveeta and cheddar with a salty kick. With the dairy surplus due to people choosing alternatives maybe not a bad idea to reimplement the program before the herds disappear and demand for real milk spikes again in 5 - 10 years.

That was good stuff! I was a single mom with 2 kids, we ate a lot of grilled cheese sandwiches. And I had a great recipe for nacho cheese using it

That was good stuff! I was a single mom with 2 kids, we ate a lot of grilled cheese sandwiches. And I had a great recipe for nacho cheese using it
Ruthie's sister is handicapped and used to get government cheese but she doesn't like cheese so guess who got it.

I love most all cheeses. But my go to favorite is Tillamook Sharp White Cheddar. Give it a try, if you can find it. Not sure about their coverage.

If on a road trip I like to keep a dry bag with Saltines, sardines, nuts, dried fruit and such. I've heard an aged cheddar travels well without refrigeration. Anyone have an experience with any type of cheese in a vehicle for a day or three, maybe exposed to heat?
I'd have to be desperate to use Easy Cheese.

Back in the Day down South Country Stores would have Hoop Cheese.
That’s a big circular Cheese about 2+ feet round sitting on a guillotine type cutter.
The country lunch might consist of some cheese, baloney, crackers and a Soda like a RC Cola.
This cheese would be sitting in the heat sweating just like the rest of us!
I think I recall it was prone to dry out if sliced and carried around very long in the heat.

I have been to the first two cheese shops. A ticket to Paris is not that expensive. PS I am also a Velveeta fan. (You can collect Smiths and Iver Johnsons)

A necessary stop coming back home from Wisconsin.



Probably the only place you can get 14 year old aged cheddar. It's excellent- too good in fact to be put on a cracker.

During my time behind the counter I sold a lot of single guitar strings. I stocked up on .016 and .018 gauge strings as that's what the local diners and delis used to cut cheese.

BTW I currently have a block of Velveeta in the fridge.
