I was recently given some 1911 parts, one of which was a recoil spring with a very light yellow paint on it. Any idea as to what weight this might be?

Sprinco Govt 18# had yellow paint. Likely one of those.

I bought a 25lb grocery-candy scale in a garage sale<large numbers on front> and drilled a hole in the middle and works great for checking springs and weighing mixes for lead. When the spring is compressed that's the weight. I checked it with new springs.

I also built a simple home-made spring strength measuring device but on a different principle. Add weight in a suspended bucket until the spring is fully compressed, then weigh the bucket.

That is also the way I measured M1911 trigger pulls.
