Would this be a good choice?
Just about everyone shoots a 1911 well. Apparently, the grip angle is good for most humans.
For me, the single action trigger and the relatively long sight radius are both helpful as well.
They can be a little large as a carry gun, depending on your dress style and body size but, for target and home defense, they are hard to beat.
Most 1911's from other manufacturers will not have an external extractor. That is not a functional issue, just a styling point.
A lot of dyed in the wool, 1911 enthusiasts will turn up their noses at the external (visible) extractor, rather than the internal extractor that helps make the original classic design look so elegant.
What would be a reasonable price to pay?
Looks like they are going for between $1300 and $1500 on GunBroker dot com. Your local dealer may do better.
That's not an unreasonable cost for a fancy 1911. But, there are quite a few 1911's from other manufacturers at much lower price points that would also be good choices. However, they are not quite as "distinctive" in appearance.
It all depends on how well-heeled you are and how much you want to pay.
